HEAT oven to 375°F. Coat baking sheets with no-stick cooking spray. Beat shortening and sugar in large bowl with mixer on high speed until fluffy. Blend in eggs.
STIR together flour, baking soda and salt in small bowl. Gradually add to shortening mixture, mixing well. Stir in mincemeat.
DROP by rounded teaspoonfuls 2 inches apart onto prepared baking sheets. Bake 8 to 10 minutes or until lightly browned. Remove from baking sheets to wire rack to cool completely.
WHISK powdered sugar and orange juice in small bowl. Spread glaze onto cookies.
Thank you for bringing the condensed mincemeat back, my family loves these! I’ve been making them for over 40 years!! The last couple years I’ve tried improvising my own so I could still make the cookies; it was ok, but just not the same! I hope it will be available.
